Growing up, my Nana would make the best blueberry muffins, so I thought that it was my turn! Easy to make and super delicious, these yummy treats are surely going to put a smile on anyone's face.
250g self-raising flour, sifted
100g brown sugar, plus extra to sprinkle on top
50ml vegetable oil
Preheat the oven to GM5 and line a muffin tray with paper cases.
Combine the egg, buttermilk, oil and sugar, then gently fold in your sifted flour until the batter has no lumps.
Carefully mix in the blueberries, then evenly divide the batter between the cases.
Bake for 20 minutes until they have risen then move to a wire rack to cool.
