Baking cupcakes is always a fun and delicious way to pass the time, now with Valentine's around the corner, you can make these simple yet yummy cupcakes to give to someone you love (or eat them all yourself!). Valentine's Day is all about the chocolate, so I was sure to include that in this recipe.
With these cupcakes, I wanted to create my own version of a Chocolate covered strawberry, since they are a staple romantic food! So, with a rich chocolate cupcake, and a sweet strawberry icing, I hope you enjoy making these scrumptious delights at home yourself.
50g unsalted butter, softened
175g caster sugar
105g plain flour
50g cocoa powder
1 1/2 teaspoons baking powder
400g icing sugar
240g unsalted butter
1/4 cup pureed strawberries
Preheat the oven to Gas mark 5 and line a muffin tray with paper cases.
Mix together the butter and sugar.
Add the eggs and stir in the flour, cocoa powder and baking powder.
Put the mixture evenly in the cupcake cases.
Bake in the oven for 15-20 minutes, then leave out on a wire rack to cool.
Cream together the icing sugar and butter until fully mixed.
Then stir in the strawberry puree.
Pipe icing onto the cupcakes and add any love decoration you please (a chocolate heart is always a winner)!
