Two-Toned Cupcakes

Staying with some more recipes, these yummy vanilla cupcakes are honestly super easy and really fun to make. Use whatever colours you like and get creative. I used pink, orange and blue for mine, but anything will look fab!

INGREDIENTS:

85g butter, softened

150g caster sugar

2 tsp baking powder

160ml milk

1 egg

1 tsp vanilla extract

140g plain flour


For the icing:

390g icing sugar

195g butter, softened

1/2 tsp vanilla extract

3 food colourings, any colour you like


METHOD

Heat the oven to GM4 and line the cupcake tray with paper cases.

Mix together the butter and sugar in a bowl until fluffy. Add the flour and baking powder and slowly add the milk.

Add the egg and vanilla extract. Mix until there are no lumps.

Put the mixture into the cupcake cases and bake for 15-20 minutes. Let cool slightly, then transfer to a wire rack.

Next, mix the butter, icing sugar and vanilla extract. Separate into 3 bowls, (there are many ways to do this but this is just how I did it this time) and add your food colouring to half of each bowl. Pipe as much icing as you like onto your cupcakes and enjoy!
